ABSTRACT

Adding value to any product is the process of changing or transforming the product from its original state to a more valuable state. Meat which is one of the major sources of protein in our meal is mainly obtained from animals, particularly cattle, goats. The study was conducted to examine the demand for intermediate moisture meat types in Umuahia metropolis. The data for the study was collected from both primary and secondary sources. The secondary data was collected from already existing literature related to the study. The primary data was collected with the aid of questionnaire administered to 100 respondents in the study area. The data was analysed using descriptive statistics and regression analysis. The findings show that there is a positive and significant relationship between income and consumption of the intermediate meat types (Suya) by the respondents. Age and income levels of respondents have significant effect between variation in prices and expenditure on Suya. This indicates that the demand for intermediate moisture meat types among households is very price elastic.
