ABSTRACT

The restaurant industry thrives on efficiency, consistency, and customer satisfaction, making effective recipe management a critical factor for success. This study explores the impact of recipe management on the operational efficiency of restaurants, focusing on four key objectives: scaling, food presentation, consistent quality control, and allergen information. The research aimed to assess how standardized recipe management practices contribute to seamless kitchen operations, maintain food quality across multiple servings, enhance visual appeal, and ensure customer safety by providing accurate allergen details. The study assessed recipe management and operational efficiency of restaurants in Umuahia metropolis. Four research purposes, and four corresponding research questions and hypotheses were developed to guide the study. The study adopted descriptive survey research design. The sample for the study was 286. A 40 items structured questionnaire was developed by the researcher and was used as the instrument for data collection. The data collected were analyzed using mean and standard deviation for the research questions while hypothesis was tested using Multiple Regression. The findings showed that scaling influences operational efficiency of restaurants to a high extent; consistent testing and quality control influences operational efficiency of restaurants to a high extent; food presentation influences ingredients management and operational efficiency of restaurants to a high extent and dietary allergen information influences operational efficiency of restaurants to a high extent. Based on the findings and conclusions of the study, it was recommended among others that restaurants should adopt appropriate strategies to boosting their brand; consistent food quality should be maintained by restaurants and appropriate food preservation methods should be adopted. The study concludes that efficient recipe management plays a crucial role in optimizing restaurant operations, improving customer satisfaction, and ensuring regulatory compliance. It recommends the adoption of digital recipe management systems and staff training programs to reinforce best practices in food preparation and service. These findings provide valuable insights for restaurant owners, culinary professionals, and policymakers seeking to enhance the efficiency, consistency, and safety of food service operations.
