ABSTRACT
The antimicrobial activity of ethanol and hot water extracts of Dennettia tripetala (Pepper fruit), Monodora myristica (AftScan nutmeg), Tetrapleura tetruplera (Aidan tree) and AJramomutn meleyueta (Alligator pepper), were investigated on some isolated food spoilage organisms; Salmonella specie, Escherichia coli and Staphylococcus aureus. The pattern ofinhibition varied with the solvents used, 70% ethanol extract was more consistent than the hot water extract with the coefficient of variation of 22.41 against 27.59 of Dennettia tripetala on Eschericia coli. The extracts of Dennettia tripetala exhibited the highest activity against Salmonella specie with a zone of inhibition 27.2mm followed by Tetrapleura tetraptera, Aframomum melegueta and Monodora inyristica at 24.7, 18.0 and 18.0mm respectively. The gram negative were more susceptible than gram positive. Salmonella specie had the widest inhibition zone 27.2mm with 70% ethanol extract of Dennettia tripetala followed by Escherichia coli 26.5mm at the concentration 47mg/ml while that Staphylococcus aureus has 23.2mm.
