Rice And Soybean Based Formulation Of Weaning Food

ABSTRACT
A rice-soy based weaning food was produced as a unit of cereal-legume mixtures with the addition of soybean overcoming the lysine deficiency of rice and the protein content of the formula increased. The processing steps used to obtain a quick to cook rice for infant consumption with an advantageous shelf- life are given as adopted from Juliano (1990). The processing steps applied for the production of soy flour which was adopted from Faryna (1985) are also shown. The anti-nutritional factors of rice and soybean with their elimination methods are also discussed. The proximate analysis of the blend with the ratio 72:28; rice: soybean (King et al.,1977) was determine and an insight is given on the nutritional value (Protein Efficiency Ratio and Feed Conversion Ratio) of the mixture as determined by a feeding trial carried out on weanling rabbits.
