ABSTRACT I xi I Plant derived pharmacologically active compounds have gained importance in food and pharmaceutical industries. The aim of the present study is to identify the proximate, phytochemical and antioxidant activity of N-hexane extract ofclove seed. The antioxidant activity of the N-hexane extract was'evaluated by l,l-diphenyl-2-picrylhydrazyl (DPPH) assay. The proximate analysis showed that the dry matter was (70.52±0.006), moisture content (29.47±0.015), ash/mineral (5.29±0.010), crude protein (5.29±0.010), ester extract (5.84±0.065), crude fibre (14.38±0.027), nitrogen free extract (38.08±0.092) and metabolizable (2250.9±0.Q25Kcal/kg). The quantitative phytochemical analysis was alkaloid (5.48±0.010), flavonoid (18.83±0.006), saponine (4.87±0.015), tannin (87.94±0.010), glycoside (6.12±0.023), terpenoid (6.37±0.006) and phenol (2.73±0.006). The Ferric Reducing Antioxidant Power (FRAP Ec 50) was 44.93 pg/ml and Hydroxyl Radical Scavenging Activities (HRSA Ec 50) (121.60 pg/ml). This study implied that clove seed extract could be considered as health nutriments in food and pharmaceutical industries. From the result, the presence of high level of tannin and flavonoid compounds revealed that Clove seed extract can have good antioxidant capacity because oftheir ability to scavenge free radicals and active oxygen species
