ABSTRACT

 I feel highly honoured and humbled to stand before you this evening to present the 21st inaugural lecture of this great University on a subject that has occupied my attention for several years. The synthesis Of this paper has been the fermentation of ideas of various origins. I hope that the final product will be of a satisfactory scientific quality, invigorating and that it will stimulate all of you, like most fermented beverages to new ideas and efforts. I will focus on some basic aspects of traditional fermented foods and beverages and illustrate how their development through modem technology can increase their consumer appeal and acceptability. I am going to tell you right away, I am not a brewing expert, I am a true microbiologist and for those of you who do not know the definition of a true microbiologist, it is those individuals who wash their hands before they go to the bathroom.
