ABSTRACT

The hotel establishment has the responsibilities of providing accommodations, foods and drinks to its client, who needs it for the purpose of making profits. This work was carried out to find out whether hotels manage their raw material, resources and its impact on their profitability. Hollywood International Hotels Limited was used to serve as the case study. Questionnaire were designed to reflect the issue under study. The population was made up of 100 staff of the hotel. The sample size comprised of 90 staff. Data were analyzed using frequencies and simple percentages. The findings revealed that the hotel should employ a defined materials management system to ensure proper productivity, accountability and thereby improving the profitability of the hotel. Employing standard recipes method, and strict supervision of kitchen staff would improve the profitability of the hotel. It is suggested that duties and responsibilities be given to staff in their different sections and departments to improve accountability, productivity and profitability.
