ABSTRACT

Fluted pumpkin pulp (Telfairia occidentalis Hook .f. was subjected to various analyse which include evaluation of its nutritional properties (proximate), functional properties, mineral compositions and anti- nutritional qualities. The proximate analysis yielded 88.633, 5.021, 1.687, and 1.203%, of moisture, fat, crude fibre and ash respectively. In the analysis of the functional properties the values were obtained. The emulsion capacity of the sample was 47.410g/g, oil absorption apcity was 3.474g/ml, and its bulk density was 0.809g/ml and the wettability of the sample which lasted for 1810sec. The mineral contents were observed to be as follows; the magnesium as 290.6, potassium was 506, and sodium was about 219mg/kg respectively, The manganese was 38.1, iron was 116. 1 and aluminum was about 0.028mg/kg. The anti-nutrients tannin, alkaloids, flavonoids and saponnins also analyzed for in the samp1e had the following values: 4.6 18, 3.853, 3.587, and 0.393% respectively.
