Abstract

 This study was carried out to evaluate the glycemic index of two potato species which are white flesh sweet potato(/pomoea batatas) and irish potato (solanumtuberesum), using human subjects for the feeding trial.the potato species were prepared in three different forms of fried, boiled and roasted and glucose was used as the control. the results of the glycemic indices followed this range, 18.55 to 66.67 at 30 minutes, 16.19 to 67.79 at 60 minutes, 1.11 to 62.20 at 90 minutes and 0.08 to 140.49 at 120 minutes. the results of the feeding trial and glycemic blood responses of both the food and controlgave the following range,78.50mg/dl to 87.50mg/dl at 0minnute, 87.80mg/dl to 122.60mg/dl at 30minute,83.10mg/dl tol04.40mg/dl at 60minute, 71.40mg/dl to 103.70mg/dl at 90minute and 81.30mg/dl to 99.70mg/dl at l 20minute.the two potato species were also prepared in flour form and was used to determine their proximate compositions, which also have the following ranges, 2.07 to 2.09% protein, 1.63 to 1.92% for crude fat, 8.49 to 9.77% moisture, 0.77 to 1.06% ash, 1.58 to 1.85% crude fiber and 83.86 to 84.94% carbohydrate. samples of the irish potato in its different forms were seen to have a low glycemic response from the sweet potato and this could make it serve as a good meal for people with diabetes.
