ABSTRACT
The proximate composition and amino acid profiles of selected accessions of African Yam Bean (AYB) were investigated to compare the differences in the properties determined. The accessions were TSS 111, TSS 60, TSS 309, TSS 51 andTSS46. The result ofthe proximate analysis shows that TSS 309 had significantly higher protein (29.5%), fat (4.45%), crude fiber (3.33%) and ash (4.15%). TSS 60 had significantly higher moisture content and carbohydrate. Results from the amino acid composition shows the,selected accessions of African yam bean (AYB) contained sufficient amount ofamino acids with TSS 111 recording the lowest values for most ofthe amino acids. The highest amino acid content was observed in glutamic acid in all the samples. The glutamic acid content of the accessions were 11.28, 12.57, 12.66, 11.73 and 12.34 forTSS 111,TSS 60, TSS 309, TSS 51 andTSS 46 respectively.
