Evaluation Of Nitrate, Nitrite, Ph And Malondialdehyde Contents Of Fruit Juices Marketed In Ubani Market, Umuahia, Abia State.

ABSTRACT

The nitrate, nitrite, pH, as well as malondialdehyde contents of fourteen brands of fruit juices marketed for consumption at retail outlets in Ubani Market were determined. Nitrite was determined by spectrophotometric method, Nitrate after reduction to nitrite with cadmium column. The values of nitrite determined ranges from 1.03-6.23 mg/dL, while that of nitrate ranges from 1.74-4.56 mg/dL. pH was determined using a pH meter with the level ranging from 2.4 1-3.40. Malondialdehyde was estimated spectrometrically. Malondialdehyde was detected in all samples with levels ranging from 1.98-9.7 1 mg/dL. The result of this work is discussed from nutritional and toxicological points of view.
