ABSTRACT xii Tallinium triangulare is a vegetable consumed by different region of the world. The T. traingulare roots is considered to be of little or no significance and often discarded as waste at the point of harvesting or before cooking, thereby constituting a menace to the environment. This study was designed to determine the phytochemical, proximate and vitamin constituents of T. triangulare roots. The determinations were done using standard method ofanalysis. The result ofthe phytochemical composition shdwed that it contains high levels offlavonoid (60.15 ± 0.05 mg/lOOg) and alkaloid (29.63 ± 0.02mg/100g) respectively. The other constituents were in trace amount. The proximate composition showed the following: carbohydrate (47.17 ± 0.01%), protein (27.19 ± 0.01%), moisture (8.5 ± 0.02%), fibre (7.24 ± 0.04%), ash (6.93 ± 0.02%), energy value (3.63 ± 0.32%) and fat (2.97%) respectively. The vitamin composition showed the presence of level of vitamin A (114.02 ± 0.02mg/100g) and vitamin C (34.02 ± 0.007mg/100g). The other vitamins studies were in trace amount. The T. triangulare root can be a source of nutrient for human and in animal feed product. Also the high levels of antioxidant phytochemicals and vitamin shows that it could be a raw material for manufacturing of useful and could also be used in the management ofmany degenerative diseases.
