ABSTRACT Aspartame consumption has been reported to implicate oxidative stress and antioxidant supplications from plant origin are one of the safest ways of averting their effects in the body. The current study was aimed at determining the effect of methanol extract of Amaranthus hybridus and Telfairia occidentalis on the lipid profile parameters of aspartame induced oxidative stress in wistar albino rats. This was done using lipid profile parameters such as low density lipoprotein (LDL), high density lipoprotein (HDL), total cholesterol triglycerides, and very low density lipoprotein (VLDL). Twenty five albino rats were divided into five groups (A - E) with five rats in each group. Group A received 300mg/kg of methanol extract ofAmaranthus hybridus. Group B received 300mg/kg of methanol extract of Telfairia occidentalis. Group C received 150mg/kg of Amaranthus hybridus and 150mg/kg of Telfairia occidentalis respectively. Group D received only 40mg/kg aspartame and served as negative control and Group E received normal rat pelleted diet and water and served as normal control. The result showed that negative control was significantly (P<0.05) higher in LDL when compared to all other groups.The result also revealed that Telfairia occidentalis and Amaranthus hibridus group was significantly (P<0.05) lower in cholesterol when compared to the Telfairia occidentalis group and normal control. It also showed that Telfairia occidentalis was significantly higher in cholesterol when compared to Telfairia occidentalis and Amaranthus hybridus, Amaranthus hibridus and negative control. On the other hand, negative control was significantly (P<0.05) lower in cholesterol compared to Telfairia occidentalis group. Our results indicated that the extract of these two medicinal plants may possibly improve lipid parameters and provide a reliable solution in averting oxidative stress pathologies.
