ABSTRACT ix Diabetes is a group of metabolic diseases characterized by hyperglycemia resulting from defects in insulin secretion, insulin action, or both. Okra is one of die most important vegetable crops cultivated in tropical,sub-tropical and warm temperate regions. This work is aimed at determning the dietary approach to management of diabetes mellitus. For the biochemical analyses, the vitamin composition of okra seed and fruit was determined while the mineral composition ofthe okra fruit flour was also estimated. The result ofthe vitamin-analyses showed the composition in the order: Seed B30.06±0.01,
