ABSTRACT xii The purpose of this study was to determine the phytochemical constituent, Vitamin and Antioxidant Properties of Turmeric {Curcuma longa L.). The phytochemical constituent of Turmeric {Curcuma longa L.) from the result showed that flavonoid (4.03±0.01) and phytosterol (3.62+0.02) showed the higher levels, Alkaloids (2.41+0.01), Tannins (2.23±0.02) showed a moderate levels while Saponin (1.87±0.01) and glycoside (1.55±0.01) at a lower level. Also from the result the antioxidant properties of Turmeric {Curcuma longa L.), it can be seen that 2, 2-diphenyl-l-picrylhydrazyl (DPPH), Ferric reducing antioxidant power (FRAP) values, Nitric Oxide Scavenging activity and hydrogen peroxide Scavenging assay showed higher concentration. Also from the result Vitamin constituent of Curcuma longa showed higher content of vitamin A (21.4±0.02) followed by vitamin C (ll.O6±O.O3) while vitamin Bj (0.21+0.01), vitamin B2 (0.50±0.01), vitamin B3 (0.20±0.00), vitamin E (0.13+0.01) and vitamin Bg (0.10±0.00) were moderate. This study highlight the potentials of Curcuma longa as a source of phytochemical, antioxidant and vitamin constituent which are beneficial to human health.
