ABSTRACT

 This study aimed at determining the concentration of nitrite, nitrate, n-nitrosamine of some fruit juice sold in Umuahia metropolis, Abia State. The nitrite, nitrate, n-nitrosamine, as well as their by-product of metabolism, malondialdehyde (a deleterious by-product of lipid peroxidation) and the pH value ofseven (7) branded fruit juice samples were determined using chemical methods. Malondialdehyde and nitrite were estimated spectrophotometrically, nitrate after reduction to nitrite with cadmium column and N-nitrosamines after decomposition to nitrite using U.V irradiation, while pH was determined using pH-meter. The results show that nitrite ranged from 0.13 p/1- 1.10p/l, nitrate was non-detectable p/I- 1.10 p/1, while n-nitrosamine was nondetectable. Also, MDA value has range of 0.82p/l - 3.74 p/1 while the pH range was 2.80 p/1 - 3.30 p/1. From these results, it can be safe to say that the fruit juices are relatively safe even though chronic consumption should be discouraged.
