ABSTRACT

The glycemic index of these coke products are not documented, and thereby depriving consumers the information they needed. This study determined blood glucose response in normal free-living volunteer adults after consumption of zero coke, normal coke, and standard (glucose) on different occasions/days. Single blind, randomized, investigation on 25 consenting apparently healthy adult volunteers with a documented normal fasting blood glucose level prior to recruitment were used. Fasting blood sugar level and postprandial of the participants were obtained on each day of the study after the consumption of 35cl of the test product and oral D glucose (standard food). Postprandial glucose response (mg/dL) was obtained for 2 hr at 15 min intervals respectively. Individual incremental areas under curve (IAUC) were obtained which was used to calculate the individual glycemic index and then later general glycemic index. Descriptive analysis was carried out and data obtained were presented in percentage/proportions, means and standard deviations at 0.05% level of confidence. Zero coke has lower glycemic index, glucose response and incremental area under curve compared to normal coke.
