Bromate Composition And Heavy Metal Concentrations In Bread Produced In Umudike, Abia State.:- Andrew, Nwanyieze G.

ABSTRACT

Bread sample produced in Umudike metropolis of Eastern Nigeria was analyzed for potassium bromate content and some heavy metals. The study revealed the presence of potassium bromate in the sample analysed, the concentrations ranged from 29.SO32.22mg kg. all the values were above the allowed limit by WHO/FAO. The heavy metals evaluated were Chromium. Copper, Cobalt and Lead. Results obtained were assessed on the basis of the permissible limits for the respective metals in Foods. The concentrations of the above listed metals in the sample were 0.05 mg/kg for Chromium, 0.01 mg/kgfor Copper, 0.22 mg kg for cobalt and 0.03 mg/kg for Lead respectively. The levels ofthese metals in the sample where below permissible limits.
