A Preliminary Investigation Of The Antinutritional Factors (Anfs) In The Edible Portion (Pulp) Of Dialium Guineese Wild:- Samuel Happiness

ABSTRACT xi Dialium guineense which grows and produces wild fruits (pulp) that are consumed raw in the South and North central zones of Nigeria was analyzed for the nutritional potential of the fruit (pulp). Proximate composition and anti-nutritional factors of the fresh fruit pulps were determined using standard methods of AOAC. Results of proximate analyses showed the rmoisture content to be 10.16g /100 g of the extract of D. guineense. The pulp of the fruits of Dalium gunieense was found to contain crude protein 5.73g, crude fat5.56g with a significant difference (<0.05), crude fibre2.22 g, ash 3.51g and carbohydrate was 67.00g /100 g sample. Apart from the presence of a trypsin inhibitor (Oladejo, 2009), the fruit pulps were low in all anti-nutritional factors studied and also can serve as good sources of micronutrients when taken as food and snacks
