ABSTRACT
African oil bean seed
(Pentaclethra Macrophylla) "ugba" was packaged using different
packaging material and different quantities. This work studies the numbers and
types of microorganism that are involved during fermentation. The bacterial
count increase from 1.04*1 ü at 24h0urs to 2.50*1 at 96hours for ugba packaged
in plantain leaves, and the one packaged in aluminum foil increased from
8.6*106 at 24hours to 1.10 x at 6hours while the one packaged in polyethylene
increased from 8.0 x 106 at 24 hours to 1.00 x 1 cfug - 1 at 96 hours. The types
of fermenting organism isolated from the ugba during fermentation includes
Bacillus sp, Micrococcus sp, Enterobacter cloacae and Corynebacteruim sp.
Bacillus sp and Micrococcus sp disappeared within the first 3 days.
Enterobacter cloacae and Coiynebacteruim sp, which was not present in the first
day, appeared on second to the fourth day of fermentation. Sensory evaluation
studies showed that sample of ugba packaged in polyethylene and the one
packaged in aluminum foil are similar in flavour and appearance and were
significantly different from sample of ugba packaged in plantain leaves (P =
0.05) but in texture the 3 samples were significantly different from each other
but all similar in taste.
