ABSTRACT

Legumes belong to the family leguminosae. Cowpea, soybean and pigeon pea are members of this family. They are both annual crops and considered staple food for many communities in different areas of the world (Enwere, 1998). Recognition has been given to the leguminous grains as important sources of protein content of the diet of large part of the world's population. Studies on legumes portion have show their potential for supplying good quality food protein and minerals greater than oilseeds (Nworgu, 2004). Pigeon pea (Cajanus Cajan) is an important grain legume crop of rainfed agriculture in the semi tropical region (Nene et al, 1990). Starch and proteins are the major constituents of pigeon pea. It contains high amount of vitamins B, carotene and ascorbic acid. Pigeon peas are valuable source of protein, minerals and vitamins and occupy very important place in human nutrition in many developing countries (Sharma, 2009). Soybean (Glycine Max) belongs to the family leguminosae and it originated from East Asia (Enwere, 1998). World production of soybean has tremdously increased in the last century and reached its present status of about l5Omillion metric tons. Soybean is mainly cultivated for the seeds used commercially as human food and livestock feed and for extraction of oil. The oil is produced almost entirely for human consumption while the defatted meal is processed into soy products for modern technology (Salunkhn et al, 1992). Cowpea (Vigna Unguiculata) is an annual tropical herbaceous, short term grain legume which is now cultivated in many tropical and sub-tropical countries.
