ABSTRACT
Cake is a baked product or batter
made from flour, sugar, eggs, shortening and leavening, mixed together in such
a way to produce a fluffy fine grained product (http://www.bakingandbakingscience.com,
July, 2008). Cake is a popular confectionery that is eaten regularly as snacks
or occasionally during celebration such as weddings, anniversaries e.t.c. The
major raw material in cake production and other baked products is wheat
(Triticum aestivum) which is perhaps the most popular cereal grain for the
production of a wide variety of baked products (Ihekoronye and Ngoddy, 1985).
Melon (Citrillus vulgaris Schrad) is a protein and fat rich crop usually found
in West Africa (Bankole et aL, 2005). The crop with seeds popularly called
"Egusi is usually grown because of its milkish white seeds, principally
due to the fact that the melon pods are too bitter for consumption and hence
are often discarded after the seeds are extracted.
