ABSTRACT
Peeling is one of the
essential preliminary operations in processing of ginger. In this study, the
performance of an existing motorized paddle type ginger peeling machine was
evaluated to determine the peeling efficiency. the material loss and throughput
capacity. Three different drum loads (2kg. 1.5kg, 1kg) and three different
shaft speed (205rpm, 150rpm, 100rpm) at different peeling duration were used.
The machine consists of the peeling unit, the hopper, the power transmission
unit as major components. Ginger is fed manually into the hopper, at constant
rotation of the paddle it causes the ginger rhizomes inside the chamber to flow
at same time. As the paddle revolves at a given speed, peeled ginger rhizomes
are discharged through the outlet for collections. The maximum peeling
efficiency of 60.4 % and material loss of 6.72% at shaft speed of 150rpm at
peeling of 55secs were obtained. The machine had the highest throughput
capacity of 1.961kg/hr at 100rpm.
