ABSTRACT

Some flour blends were prepared from two verities of cassava [TMS 419 and NR8082] soybean flour at di.terent proportions and extruded into noodles with a locally fabricated and manua' operated single screw extruder. The proximate composition and functional alities of the different flour blends were evaluated. The sensory qualities of theoodle produced were determined using the instant noodle as a control. The floiLr blend had proximate compositions ranging from protein 11.78% - 17.27%, cude fiber 1.84% - 3.15%, ash 3.34% - 4.0%, fat 5.89% - 7.83%, moisture 4.1 1% -7.85%, carbohydrate 54.33% - 63.48%, respectively. Bulk density bf the flour blends ranged from 1.05mg/mi — 1.12mg/mi. The composite :Jour sample had water absorption capacities of 1.97m11g — 3.97m11g and oil sorption capacities of 2.71mg/mi — 2.80mg/mi. The swelling index and the wet aity of the flour blends range from 1.11mg/mi — 1.27mg.mland 2.33 sec. — 400 see., respectively. The sensory evaluation based on the nine point. Hedonic scale, showed that the cooked noodle sample had 4.68- 5.68 scores in odour ,3.95-5. colour, 2.95-4.89 taste, 2.95-4.29 texture. Noodle sample produced from drieC R8082/soy bean (60:40g)were most acceptable compared to others.
