ABSTRACT

Some flour blends were prepared from two verities of cassava {TMS 419 and NR8082} soybean flour at different proportions and extruded into noodles with a locally fabricated and manually operated single screw extruder. The proximate composition and functional qualities of the different flour blends were evaluated. The sensory qualities of the noodle produced were determined using the instant noodle as a control. The flour blend had proximate compositions ranging from protein 11.78% - 17.27%, crude fiber 1.84% -. 3.15%, ash 3.34% - 4.0%, fat 5.89% - 7.83%, moisture 4.11% -7.85%, carbohydrate 54.33% - 63.48%, respectively. Bulk density of the flour blends ranged from 1.05mg/ml — 1.12mg/ml. The composite flour sample had water absorption capacities of 1.97m11g — 3.97ml/g and oil absorption capacities of 2.71mg/ml— 2.80mg/ml. The swelling index and the wet ability of the flour blends range from 1.11mg/ml— - 4 1.27mg.mland 2.33 sec. — 4:00 sec., respectively. The sensory evaluation based on the nine point. Hedonic scale, showed that the cooked noodle sample had 4.68- -, 5.68 scores in odour ,3.95-5.3 colour, 2.95-4.89 taste, 2.95-4.29 texture. Noodle sample produced from dried NR8082/soy bean (60:40g)were most acceptable compared to others.
