ABSTRACT
This work aimed at
evaluating the chemical, functional and pasting properties of some trifoliate landraces, Harvested trifoIiate yam tubers were processed into
starch. The chemical, functional and pasting properties, standard methods was
used to analyze them. The chemical prosperities of starch showed that starch
yield 10.965-20.'18 I%, Amylose 16.689-28.060% and Amylopectin 71 .94-88.33%
with significant ditTerence at P
<0.O5 between the starches. Functional properties showed that swelling index 1.00- 1.16%, bulk density 0.579-0.743g/mol, gelatinization temperature 80.00-82.50°C, oil absorption I 0.06-10.795g/mol, and water absorption capacity 9.70-10.20% with significant difference at P><0.05. The pasting properties showed that pasting temperature 85.70-88.92, peak viscosity 84.04-356.79BU, breakdown 140.3 7-228.SOBU, setback 46.00-153.96BU with significant difference at P><0.05. With the high starch yield obtained from dumetorum landraces as compared with cassava and corn, the industrial potential of the yams could be fully exploited for starch production. The available data on the industrial potentials of the yams and starch is adequate to encourage the commercial production of dumetomm landraces for commercial starch production.>
