ABSTRACT
The
study was designed to evaluate the nutrient and anti-nutrient composition
ofAfrican bread fruit Treculia africana and yellow maize Zea mays enriched with
scent leafand fluted pumpkin. The seeds and green vegetable were purchased from
Ubani Umuahia main market, Abia state. African bread fruit and yellow maize
samples were rationalized randomly in a combination that produced six different
taste, samples. The quantity offluted pumpkin and scent leafwere at constant
amount in all the five samples. But the remaining one taste sample which was
known as the control, were without ofscent leaf and fluted pumpkin. The African
bread fruit and yellow maize are equate in control which means 50% each. They
were grouped in six different samples, sample 401 (60g ofAfrican bread fruit,
30g ofyellow maize, 5g ofscent leaf, 5g offluted pumpkin), sample 402 (40g
ofAfrican bread fruit, 50g ofyellow maize, 5g ofscent leaf, 5g offluted
pumpkin), sample 403 (50g ofAfrican bread fruit, 40g of yellow maize, 5g of
scent leaf, 5g of fluted pumpkin), sample 404 (70g of African bread fruit, 20g
of yellow maize, 5g ofscent leaf, 5g offluted pumpkin), sample 405 (30g
ofAfrican bread fruit, 60g of yellow maize, 5g ofscent leaf, 5g of fluted
pumpkin) and sample 406 (50g of African bread fruit and 50g ofyellow maize)
which was the control. The samples were randomized, it were cooked as pottage
and subjected to sensory evaluation (texture, taste, flavour, colour and over
all acceptability). 25 untrained Panellists from the university was selected.
The samples were further subjected to chemical analysis to determine the proximate,
vitamin, mineral and antinutrients. Chemical evaluation showed that the sample
pottages had better and greater amount of Vitamins, minerals, micro and macro
nutrients (Ash content).The protein proximate ofthe blend reached 31'. 10%
while that ofthe unblended was only 9.9%. Vitamin A content ofthe pottage blend
was as high as 20.33p, while the control was6.1iu.Vitamin E contents of the
blend reach 2.33p while the blend was 0.7iu in Vitamin E, Vitamin C contents
ofthe blend was as high as 7.11'mg/lOOg, while the unblended control was
2.10mg. Vitamin B2 contents ofthe blend was 4.26mg/100g, while the unblended
control was 1.20mg/100g.0 statistical, no significantly differences existed
among the pottage sample in all analytical parameters at p=<0.05. Therefore,
enriched African bread fruit and yellow maize pottage is more nutritious and
should’be adopted by the consumers.
