ABSTRACT
The effects of sprouting on functional and
antinutritional properties were studied. Cultivars of Xanthosoma sagittifo/ium
and Colocassia esculenta were planted and unearthed at the onset of sprouting
and were prepared and used to determine the antinutritional properties
(oxalates, phytates, hydro cyanide, alkaloids and saponins) and functional
properties (bulk density, oil absorption, water absorption, gelatinization
temperature and viscosity). In anti-nutritional properties of sprouted cocoyam
varieties,the mean value for oxalates ranged from 0.42- 0.95mg/g, phytates
(98.44 - 130.31mg/g), hydro cyanide (0.32- 0.83mg/g), alkaloids (0.04- 0.14%)
and saponins (0.32 - 0.67%). In the results for functional properties of
sprouted cocoyam varieties,the bulk density ranged from 0.70- 0.79mg/g, oil
absorption (2.84 - 3.7lmg/g), water absorption (2.20 - 2.51mg/g),
gelatinization temperature (63.85 - 73.82C) and viscosity (0.16- 0.26cp). The
study showed that sprouting enhanced some of the functional properties and also
significantly (p>0.05) decreased all the anti - nutrients that were analyzed
and therefore sprouted cocoyam cultivars can be successfully used in different
food formulations.
