ABSTRACT
In this study, the work was carried out to
determine the nutrient composition, glycemic index and glycemic load of aerial
yam-cowpea fufu-like product in healthy subjects .Proximate and antinutrent
analysis were carried out on the test food, two (2) products were used to
formulate four (4) samples of 50:50, 60:40, 80:20 and 100, 50 g oforal glucose
was used as reference food and also 50 g ofthe test food was used to check for
the glycemic using standard method. A total of eight (8) healthy volunteers
were used in this study. The volunteers consisted of six (6) females and two
(2) males, two (2) persons per group. The Body mass index (BMI) ofthe subjects
were assessed using a structured questionnaire and a weighing scale
respectively. Capillary blood samples were collected using Glucometer (Accu
check). The result ofthe proximate analysis showed that the moisture content
ranged from 18.77 - 22.86 %, sample AC1 containing (50 % aerial yam - 50 %
cowpea) had the highest moisture content of 22.86 %. The crude protein ranged
from 4.26 - 13.01 % , sample AC1 (50% aerial yam — 50 % cowpea) has the highest
crude protein value of 13.01 %, The crude fibre ranged from 0.60 - 0.23 % ,
sample AC1 containing (50 % aerial yam - 50 % cowpea) has the highest crude
fibre of 0.60 % , The ash ranged from 1.21 - 0.97 % sample AC1 (50 % aerial yam
- 50 % cowpea) has the highest ash content of 1.21 % , the fat content ranged
from 0.51 - 0.67 %, sample AC4 (100 % Aerial yam) has the highest fat content
of 0.67 %, The carbohydrate ranged from 61.18 - 75.09 % , sample AC4 (100 %
Aerial yam) has the highest carbohydrate content of 75.09 % , the energy value
ranged from 303.87 - 323.47 KJ, sample AC4 (100 % Aerial yam) has the highest
energy value of 323.47 KJ. The result of the antinutrients shows that there was
no significant difference in the tannin value of all the samples. The phytate
ranged from 0.28 - 0.48 mg/lOOg. Sample AC4 (100 % Aerial yam) has the highest
phytate value of 0.48 mg/lOOg, there was no significant diference in the
saponin value of all the samples. The oxalate ranged from 0.47 - 0.9 mg/lOOg,
sample AC4 (100 % Aerial yam) has the highest oxalate value of 0.93 mg/lOOg.
sample AC1 (50 % aerial yam - 50 % cowpea) and AC2 (60 % Aerial yam - 40 %
Cowpea) has the highest alkaloid values of 0.94 and 0.87 mg/lOOg. For the
glycemic index the sample sample AC1 (50 % aerial yam - 50 % cowpea) has the
highest glycemic index of 80.67 mmol/L while sample AC2 (60 % aerial yam - 40 %
cowpea) has the lowest glycemic index of 70.25 mmol/L , sample AC3 (80 % aerial
yam - 20 % cowpea) has a glycemic index of 74.65 mmol/L, sample AC4 (100 %
Aerial yam) has a glycemic index of 80.44 mmol/L, The results also indicated
that sample AC4 (100 % Aerial yam) had the highest glycemic load of 60.40 g
while sample AC2 (60 % Aerial yam - 40 % cowpea) has the lowest glycemic load
of45.71 g
