ABSTRACT

 Chemical composition and sensory evaluation of breakfast cereals from flour blends of Acha, Soybean enriched with A. brasiliana powder was investigated. The proximate composition, mineral content, vitamins content, anti-nutrients and sensory parameters were analysed. The results from proximate composition showed that protein content ranged from 15.23 to 23.11% with sample 121 (85:12:3) having the lowest value and sample 363 (50:47:3) having the highest protein content. Moisture content ranged from 7.28 to 7.93%, Crude fibre content ranged from 0.14 to 0.35%, fat content ranged from 3.14 to 6.31%, ash content ranged from 2.93 to 3.44%, dry matter content ranged from 92.07 to 92.72%, carbohydrate content ranged from 61.76 to 70.77%. The micro-nutrient analysis of the samples showed that there were significant differences (p<0.05) among the vitamin A content of the flaked samples. Vitamin Bi content ranged from 1.06 to 2.28 mg/100 g. Vitamin B2 content ranged from 0.31 to 0.77 mg/100 g. Vitamin C content ranged 0.97 to 1.45 mg/100 g. Iron content ranged from 34.08 to 47.62 mg/100 g, phosphorous content ranged 25.54 to 26.87. The anti-nutrient analysis showed that tannin content ranged from 03.39 to 0.86 mg/g, phytate content ranged from 2.85 to 3.41 mg/g, oxalate content ranged from 0.34 to 1.09%, trypsin inhibitors ranged from 0.02 to 0.09 TIAmg / 100 g. Sensory evaluation showed that the control sample was accepted more by the panelist in all the sensory attributes evaluated.
