Nutrients And Sensory Evaluation Of Turmeric Drink (Nigeria Curcuma Longa L)

ABSTRACT
This research identified and investigated the nutrients and sensory evaluation of turmeric drink (Curcuma longa L) (NCLI) using orange and pineapple drink to compare analytically and its sensory attribute. From the result, there was a significant difference (P< 0.05) in the sensory properties of the three (3) drink samples; each of them differed from each other. For proximate composition turmeric drink was protein (2.6%) while orange drink was (0.22%) and pineapple drink (0.11%), turmeric drink was crude fiber (3.55%) while orange drink was (0.22%) and pineapple drink (0.20%), turmeric drink was Non-protein Nitrogen (NPN) (0.37%) while orange drink was (0.03%) and pineapple drink(0.18%),turmeric drink was Total Ash (0.25%) while orange drink was (36.4%)and pineapple drink (37.7%)turmeric drink was sucrose (carbohydrate) (24.0%) while orange drink was(56.6%) and pineapple drink (57.5%), turmeric drink was fat (5.4%) while orange drink was(7.07%) and pineapple drink(10.2%). For Minerals turmeric drink was Magnesium (0.34mg) while orange drink was (0.15mg) and pineapple drink (0.22mg), calcium turmeric drink was (0.70mg) while orange drink was(0.70mg) and pineapple drink(1 .03mg), Phosphorous turmeric drink was (2.41mg) while orange drink was(1.76mg)and pineapple drink (2.52mg), sodium turmeric was (0.l9mg)while orange drink(0.84mg) and pineapple drink(1.24mg), Potassium turmeric drink was (0.15 mg) while orange drink was (0.54mg) and pineapple drink (1.60mg). For vitamins turmeric drink was vitamin A (266mg/dl) while orange drink was (333.5mg/dl) and pineapple drink (266.5mg/dl), Vitamin C turmeric drink was (30.78mg) while orange drink was (20.7mg) and pineapple drink (25.4mg). The consumption of this turmeric drink was found good in treatment of diseases, absorption and body fit maintenance.
