ABSTRACT x In this study, the antioxidant activity of fresh and fermented aqueous fraction of crud palm oil was evaluated by various antioxidant assays, including 1,1-Diphenyl2-picryhydrazyl (DPPH), ferric reducing antioxidant power, thiobarbituric acid reactive substance and total antioxidant capacity. The various antixiodant activities were compared to standard antioxidant such as ascorbic acid, gallic acid equivalent and hydroxyloluene. All extracts showed strong antioxidant activity in all tested methods. Among the fresh and fermented of aqueous fraction of crude palm oil the fermented aqueous fraction of crude palm oil has been found to possess the highest activity in all tested methods. The activity of both fresh and fermented aqueous fraction of crude palm oil in percentage inhibition with the concentrations of DPPH scavenging activity showed a high increase in scavenging free radicals. As well as reducing the risk of inflammatory diseased. In addition to the antioxidant activity of these experiments, the water soluble of these experiments, the water soluble antioxidant (vitamin C) and far soluble antioxidant vitamin A had found detected in fermented more than in fresh aqueous fraction of crude palm oil using TAC and TBARS as the determinants.
