ABSTRACT
Solar fish dryer with a concentrating collector was successfully developed and tested in Michael Okpara University of Agriculture, Umudike, Abia State (latitude of 5929¢N) from Nov. 13 to Nov. 15% 2010. An average collector inlet air temperature of 57.69C was recorded on the first day. Total moisture of 102.77g was removed from the fish, from 156.6g to 53.83g, to bring it to a moisture content of 27.3%, which falls within the recommended final moisture content of dried fish.
