ABSTRACT

Peeling is one of the essential unit operations in processing ginger. Manual peeling is inefficient and it is associated with drudgery, hence, a motorized ginger peeling machine (GPM) was designed, fabricated and tested. The GPM consists of a drum eccentrically mounted on a shaft rotating at a speed of 90rpm This speed of rotation was achieved by means of pulley and belt arrangement. The paddle on the rotatory shaft inside the drum serves as the abrasion where the peeling is done. The peeling efficiency is 65.99 % and the breakage of ginger is 35.96% while %flesh loss of ginger of the machine' is 9.96%
