ABSTRACT

Juice was processed from Carica papaya (paw — paw) fruit. It was treated with citric acid, sodium metabisulphite and combination of citric acid and sodium metabisulphite at different concentration (0.Olppm, 0.ol5ppm, 0.02ppm and 0.025ppm), packaged in sterilized plastic bottle and then pasteurized at 9000 for 10 minutes. It was cooled at 25°C and then stored at ambient temperature on a shelf. The juice was analysed for vitamin C, pH, total soluble sugars and microbial load after extraction, the first day, 14th day, 32nd day and 47th day of storage period. The result obtained shows the unpasteurised juice has highest vitamin C content of 26.5mg/100g. Among the treated juices, Samples treated with 0.01 ppm combination of citric acid and sodium metabsulphite is significantly higher in vitamin C content (21.26mg/100g). pH decreases during storage period from 7.0 to 4.28. Unpasteurised juice has highest microbial count of 1 .00x1 05cfu/ml after extraction, the microbia' load increases during storage period from 1.20 X lO5cfu/ml to 6.00 X 105cfu/ml for bacteria and 1.0 X 105cfu/ml 6.90 X 105cfu/ml for yeast + mould count. Base on the microbial assay, the juices are safe within 14 days of storage.
