Phytochemical Proximate And Mineral Composition Of Colocasia Esulenta Corm
ABSTRACT
The phytochemical, proximate and mineral composition of colocasia esculenta corm (cocoyam) was investigated — using standard methods. The phytochemical analysis showed the presence of reducing sugar, flavonoids, saponins and tannins respectively. The result also showed high content of oxalate (28.15mg I bOg). The proximate analysis revealed that the corn of colocasia esculenta was rich in carbohydrate (80.62 %), crude protein (5.11 %), crude fiber (2.95 %) ash (2.85 %) and moisture (7.43 %) which is within the range for a carbohydrate food. The result also showed high levels of calcium (62.12mg I lOOs) followed by Sodium (50.13mg I bOg) respectively. The levels of iron, magnesium and potassium were low (2.10mg I 100g — 4.57 mg I bOg). The result of this research indicates that the corn of colocasia esculent corm has nutritional and medical properties that could provide the user and consumer with additional nutrients and the presence of phytochemical indicated that it is a potential source of drugs.
