ABSTRACT
Phytochemical screening or two species of Vigna radiata (mungu
bean) China specie (A) and Nigeria species (B) were carried out in their and
unsprouted states using acceptable chemical and biochemical riles! neilie a t
ntiulysis. Ihe mean concentrations of SikaloidS, 5iifOnH1, !tiiiiiiaisid
Flavonoid for unsprouled Nigerian species (B) were 2.92, 0.21, 0.3 I and 0.3 1
mg/I OOg respectively and 2.77, 0.22, 0.29, 0.3 ti mg/I OOg I Hllowing
thc-order above. The trypsin inhibitor activity of iNs :;poHt: (g) was 11.16
Tui/100g Hr nnsprotitcd and 2.37 i'ai7i20 Hr aroated white crude protein
content was 23 .57% For unspmucd and 25 .21% Hr spim ted For china species (A),
the mean concentrations oI alkaloids, asponins, (ann ins and Havonoid contents
for ii nsprouted vacre: 2.35, 1 .0.!.. 0.25 aid 0.36 mg/I 00g in sprouted
