ABSTRACT
This study evaluated the
physicochemical and functional properties of whole and defatted fluted pumpkin
seed flours from different locations of Southern Nigeria. Two samples of fluted
pumpkin pods were purchased from South-east and South-south Nigeria. The pods
were broken and the seeds removed. These (1.5kg for each) were dried, dehulled
and processed into flour, half of the flour from each sample was defatted with
N-hexane using maceration technique. The whole and defatted seed flours were
evaluated for functional , nutrient and photochemical properties. Protein
content ranged from 21.54% in whole flour from South-east to 30.65% in defatted
flour from South-south. Both whole and defatted flours had high content of
fibre (2.28 to 2.66%), ash (2.71 - 3.43%) and carbohydrate (40.26 - 58.08%).
The flours have high content of tannin (12.23 - 21.24mg/100g), and phytate (216
- 3.57 mg/100g). The carotenoid content was low (0.61- 0.94mg/100g) and was
reduced in the defatted samples. The .range of the mineral compositions of the
fluted pumpkin seed fours were sodium (0.26 -0.36%), potassium, phosphorus and
calcium had no significant difference (p > 0.05) except for whole flours and
defatted flours from South-south which had their higher range as 0.14, 0.96 and
0.08mg/g respectively. Magnesium ranges from 0.28 to 0.59 zinc 2.11 to 2.46.
The fluted pumpkin seed flours can be used to fortify other food products, like
bread and biscuits.
