ABSTRACT
The selected ready-to-eat foods
were analyzed according to standard bacteriological methods for presence of
Salmonella species and Escherichia coli of public health significance.
Salmonella species was not isolated in any of the 50 samples. Escherichia coli
were isolated from 5 samples of salad and two samples of African salads
(Abacha). The total viable counts of the samples were also determined. Salad
and African salad (Abacha) had the highest mean count of 3.40 x 106
cfu/ml and 3.00 x 106 cfu/ml with cooked vegetable the lowest with
1.60 x 106 cfu/ml. Sensitivity pattern of Escherichia coli was
determined. E.coli isolates were resistant to Streptomycin, Tetracycline,
Sulfomethaxazole but sensitive to Ampicillin, chloramphenicol, Gentamycin,
Kanamycin and Amoxacillin. These results indicate unhygienic conditions of food
handlers. Proper personal hygiene and processing should be adhered to in order
to avoid possible food outbreak.
