ABSTRACT
In this study, locally consumed cereals in South-eastern Nigeria were analysed for their proximate composition, salt and vitani in content. The result showed that maize had the highest crude fibre and fat contents of (1 .85 ± 0.01) and fat (4.07 ± 0.02), respectively more than other cereal samples analysed. Rice had the highest carbohydrate content (80.22 ± 0.02) and lowest moisture content (9.24 ± 0.00), ash content (0.78 ± 0.0 1), crude flhre (0.84 ± 0.01), fat content (0.14 ± 0.00), crude protein (8.76 ± 0.00). Maize had the highest vitamin A (4.29 ± 0.0!), vitamin I3 (0.53 ± 0.01), vitamin B3 (2.87 ± 0.03), vitamin C (7.85 ± 0.0 1), vitamin F (I .65 ± 0.00). Salt content showed considerable low amount which ranged from (0.073 ± 0.00) to (0.84 ± 0.00) with rice containing the highest aniouiit and \vlieut the lowest amount. In conclusion, the result of' this research suggest that inaize may contain more nutrient than the other cereal samples analysed.
