Mycoflora And Aflatoxin B, In Melon Seed Cake “USU” Produced In Abia And Imo States Of Eastern Nigeria
ABSTRACT
Samples of melon seed cake snacks "usu" were purchased from two different states Abia and Imo of Nigeria .The snack samples were analyzed for fungal contamination and aflatoxin B1 content. The study demonstrated the presence of three fungal genera, Aspergillus spp, Pen/cl/hum spp and Geotrichum spp. The mean moisture contents of the samples from various locations of the states were 20.25% and 22.35% respectively. The mean pH values for the samples from the states were 5.8, which show that the snacks are low acidic food products. The aflatoxin B1 concentration ranged between 3.Oug and 3.9ug, which is below the WHO recommended level (20ug) for human consumption... The present results would be very important in assessing the safety of melon seed cake snacks sold to the public in two south eastern states of Nigeria.
