ABSTRACT
The microbiological quality of exposed food thickeners
Mucuna flagellipes (Ukpo) ,Detarium microcarpum (Ofor),and Brachystegia
euryconia (Achi) sold in (Ahia Eke, Ahia ohuru, Ariaria, and Ahia nkwo) in Aba
, Abia State ,Nigeria were examined for their microbiological quality using
standard microbiological methods like serial dilution method, Gram staining
method which helps to differentiate bacteria into two groups (gram positive and
gram negative),biochemical tests ;catalase test, calculate test, indole test
,motility test and hydrogen suiphide test then for the identification of
fungal: lactophenol cottonblue staining method and sugar utilization test were
used.. The fungal count in the samples was highest in Ahia nkwo with 1.13xIO
CFU/g while the least count of O.5x1O was recorded in Ahia eke. The total
bacteria count in the samples was highest in Ahia eke with 3.64x IO5CFU/g and
the least count recorded in Ahia ohuru with 2.56x1O5CFU/g. A total of six
microorganisms were isolated; Bacterial isolates included; Escherichia coli,
Staphylococcus aureus, Salmonella spp and • Bacillus spp. The fungal isolates
included, Aspergillus niger, and Penicillum spp. The presence of microorganisms
in food thickeners pose a great threat to individual who consume them
undercooked, therefore the need for constant assessment of the safe quality of
these food thickeners is very important.
