ABSTRACT.
The microbial
quality of Zobo drinks was investigated. The highest mean bacterial count was
5.2 x 10 CFU/ml. while the total colifonns was 4.8 x 10 CFU/ml. Bacteria
isolated from Zobo samples included Staphylococcus aureus, Bacillus species and
Escherichia co/i. Fungal isolates were Aspergillus specie, Penicilliurn specie
and Rhizopus specie The total coliforms and aerobic bacteria count generally
decreased in values after treatment of Zobo samples with lime. The nutritional
evaluation of Zobo juice showed that moisture content was 94.09%, Ash (0.30%),
and protein (1.23%). The study revealed that lime juice of 2rn1s can be used to
prolong the shelf life of Zobo juice (10ml).
