ABSTRACT
Three fruits: Orange, tomatoes and pawpaw were obtained, cleaned, washed, cored and crushed into pulp. The various fruit puips were chemically treated with Naci, Sugar and alum at different concentration of O.5g, 1.Og, 1.5g and 2.og/250m1 respectively, and left for 20 minutes before ohmic heating at ll0v forlO minutes each. After ohmic heating, each juice was obtained by pressing through a muslin cloth. The juices obtained were evaluated for the minerals and microbial loads. The result obtained showed that ohmic heated decreased the mineral content of the juices, but the addition of Nacl increased the sodium content of the samples. Their concentration increased. Alum was found to decrease the mineral content of the juice while sugar either increased or did not affect the mineral. The microbial analysis indicated that ohmic heating at higher voltages and longer time destroyed most pathogens, and the addition of Nacl further helped the antimicrobial effect of the heating, while suqar helped the growth of the pathogen at various concentration.
