ABSTRACT
Protein isolates (P.1) were prepared from three legumes — soyabean (Glycine max), pigeon pea (PP) (Gajanus. cajan) and African yam bean (AYB) (Splienostylis stenocarpa) Preliminary experiments were conducted to detetrijine the appropriate solvents and optimum pH for protein isolation from AYB and P.P., P.1 from soyabean was used as a standard for comparison. The bulk density, water absorption capacity, foam capacity and stability of the protein isolates were evaluated. Seventy (70) percent ethanol was the best solvent for isolation of AYB and PP protein (in terms of yield); followed by NaCI. For AYB, pH 4 was optimum for protein isolation while for PP, pH 6 was optimum for isolation of the protein. Thç solvent system used for the optimum pH was the same for protein isolation. Water absorption capacity of soyabean protein was found to be higher than those of AYB and PP proteins. Bulk density values for AYB and PP were higher than the values for the protein from soyabean. Soyabean protein foims a more stable foam than PP and AYB proteins.
