ABSTRACT

Dawadawa was prepared by the fermentation of castor seed and locust bean. The effect of lime juice on the microbial and chemical characteristics of the condiment were investigated during laboratory fermentation that lasted for 96-hours. The seeds underwent a natural fermentation that was dominated by the growth of microorganisms. Several bacteria e.g. Bacillus subtilis, Staphylococcus aurcus, Micrococcus spp., and Pseudomonas were involved in the fermentation. Also Slioptococcus and Kiebsiella were found in locust bean, while Eutococci and Leuconostoc were isolated in castor seed. Also identified were yeast, rhizopus and fungi. ANC (Average Number of Colonies) decreased in locust bean from 159 to 65 in day 4 as concentration of lime juice increased. Meanwhile ANC was highest in day 2. There was a 3% protein increase in locust bean. The concentration mean for protein decreased slightly and was lowest at 5% lime juice level for both castor seed and locust bean. Fat content increased from 20.61 — 24. 0 as fermentation period increased but decreased slightly as lime juice concentration increased. Temperature, moisture and soluble solids content also increased with fermentation period. Carbohydrate decreased from 28 59-25.40 as fermentation period increased. As concentration of lime juice increased, carbohydrate increased and was highest at 5% level. Total solids and fibre equally decreased with fermentation period
