ABSTRACT

The project aims at studying the effects of drying on the proximate phytochemical and nutritional composition of an Aiden fruit. The study was carried out National soil, water, plant and fertilizer laboratory , Umuahia . The study will involve drying Aiden fruits using different drying conditions (e.g. oven drying at 45oc,6O°c,75°c and sun drying,) and analyzing the dried samples to determine the effect on the proximate composition (moisture, protein, fat, ash, and fiber) and phytochemical and nutritional content (vitamins and minerals) of the fruits. It was discovered that oven drying improved vitamin A by 24.69% as the temperature increased from 45°C to 75°c. While sun drying introduces about 14.25% increase to the vitamin A. Vitamin B2 was resistant to all the drying conditions studied as negligible change was observed during investigation. It was observed that all the proximate parameters increased non-significantly (p

<0.05) with increase in temperature except moisture content that decreased. As discovered from the analysis, adopting sun drying to oven drying would be recommended in order to preserve the phytochemicals present in the fruits because within the temperature of 45°c to 75°c certain phytochemicals present were dissipated by heat within the said temperature range. >
