ABSTRACT

The study on the determination ofsome selected physical and chemical (functional) properties of Dika seed (Irvingiu gahoiicnsis) to reduce drudgery in the processing of Dika seed (Jrvingia "uboiH'iisis) and it was carried out by using standard procedures. These properties were evaluated al a moisture content of24.3% (dB). The major, intermediate and minor diameter were found to be 3.23mm. 1.80mm and 0.52mm respectiv ely. the arithmetic mean diameter, geometric mean diameter square mean diameter. EMI) and sphericity of Dika (Jrvingia gahonensix) seed are 0.0069mm. 0.121mm. 1.7981mm. 0.1563mm. 3.2497mm respectively. The true density, bulk density and aspect ratio of the seed were 0,98g/mm3, 4.60g/mnT and 56.1353mm respectively. The anele of repose for phywood, glass and metal sheet are 55°, 33° and 32° respectively while their corresponding static friction are 0.38. 0.67, and 0.77 respectively. The volume, surface area, one hundred weight of seed were 156.17mm3, 4.7500mm2, 0.6249g respectively. The oil and water absorption capacity of unmiled are 7.00g and 3.00g respectively while, the milled oil and water absorption capacity are 7.20g, and 3.40 respectively. The absorbance and transmittance of unmilled are 0.422ml and 1.153ml respectively, while the absorbance and transmittance of milled are 0.646ml and 1.327ml respectively. The solubility index of unmilled and milled are 1.057mm and 1.097mm respectively. The unmilled and milled Dika (Jrvingia gabonensix) seed have gelation temperature and lime as 60°C and jOminutes respectively. The information gotten will therefore and in the processing (milling, packing and storing) each varieties.
