Detection Of Fungi And Estimation Of Mycotoxins In Groundnuts Purchased In Ahia Umudike Of Ikwuano L.G.A, Abia State
ABSTRACT
Groundnut is the edible seed of
plant, Arachis hypogaea. Groundnut are also known as peanuts. Poor storage of
peanuts can lead to an infection by the mould fungus Aspergillus fiavus and
Aspergillus parasiticus releasing the toxic substance afiatoxin. The major
producers /exporters of peanut are the United States of America, Argentina,
Sudan,Senegal and Brazil. These five countries account for 71% of world
exports. In recent years, the United States has been the leading exporter of
peanuts. However, based on extensive analytical studies (IARC, 1993) and
detailed study of the distribution of fungi in nature, the five agriculturally
important L. toxins from fungi are aflatoxins, fumonisins, ochratoxin A,
zearalenon and deoxynivalenol. Fungal toxins can cause acute or chronic
intoxications, depending on the animal, sex, breed, and dosage. The only toxin
that has gained prominence in scientific literature in food products from the
west African sub-region is aflatoxin, while there are few studies conducted on
fumonism and ochratoxin A. Aflatoxins are polyketide secondary metabolites produced
by important food contaminating species of A spergillus flavus and Aspergillus
parasiticus.
