ABSTRACI'
Cyanogenic potential and partial purification of3-g!ucosidase was carried out on
cassava cultivar TME 419 and other processed cassava food using acceptable
chemical methods. Extraction using acetate buffer and precipitating with
amnionium sulfate ((NH4)2So4) gave a I)alialJy purified enzyme with enzyme
activity of 4.5 unit/in! and specific activity of 1 .248 unit/mg protein. Using the
protocol B method for total cyanide determination, the ibllowing was found to be
the total cyanide distribution in both wet and dry peel, pulp and leave (l2O.78ppm,
26. 14ppni and 75.24ppm) and (25.34ppm, 53.46ppm and 24. l6pprn) respectively
with carotenoid value of 7mg/g in the pulp of the cassava cultivar TME 419.
The protein content of the partially purified enzyme was 3.6038mg/mI.
